Scandi Grain Free Granola

Over the years I have noticed that the one thing that unites us Scandinavians abroad is our longing for the taste of home. A faint waft of cinnamon buns can turn the most gluten-averse Swede into a ravenous wheat freak. Or salivating upon seeing the perfect, powdery surface of a semla, the delicious cardamom bun we eat for lent, stuffed with whipped cream and marzipan, that in the olden days was served with the (odd) addition of warm milk. I have recently taken up hot yoga and today, as we were laying on our mats in class, dripping in sweat and grateful for a momentary breathing pause, our instructor talked about the importance of the month of January. In her lovely yoga studio, January is when many will begin a yoga class for the first time, fuelled on by a new year’s resolution and a wish to dip their toes into the unfamiliar. Vegan Red Lentil and Chickpea Falafels with Curry sauce


I’ve been stuck in a rut recently. Not quite knowing what to cook and often ending up with a varied bunch of vegetables topped with some vinaigrette dressing. Nothing wrong with any of that at all but it can sometimes get a bit dull. I guess we are all the same, when there is a lot going on we loose the time to experiment and play around with new flavours. And flavour is so important, especially during winter time when you long for spice, heat and comfort. So when my friend cooked these vegan and gluten-free falafels for me last week I got so excited that I came home and recreated them right away. Green Juice Changed My Health


How I started.

Juicing has changed my life and my health. Simple as that. I started on a friends’ recommendation a few years ago and noticed a big difference right away. I had more energy (like lots more), less bloat and no colds. Flu and tummy viruses seemed to not take hold any longer despite having two kids who regularly brought bugs home from school and nursery. A few of my Swedish things…


Us London Swedes have it good. If we get home sick there are plenty of places we can go to have ‘fika’, our Swedish word for sitting down for a while and having a cup of coffee, maybe a cinnamon bun whilst chatting to a friend.
