Simple Super Salad

I woke up craving a serious nutritional boost this morning – I think it was some kind of post Easter reaction. As I crawled out of bed very early (we’re still jet lagged) and did a fridge inspection I realised that if it wasn’t veggie I was not having it, end of.  Carrots, spinach and sprouts never looked so good and I started chopping, washing and blending like a woman possessed. My kids were staring at me as it was 7 in the morning!

The result of having a healthy lifestyle is both a blessing and a curse. When you go off piste (like stuffing your face with Easter food and sweets) you notice your body slowing down right away and you can’t wait for your energy to return – the good news is that your body resets itself pretty fast. In a body with limited toxins your immune system can get to work pretty rapidly.  And the remedy is always the same. Plenty of organic fruit and veg, lots of water, good fats, herbal teas and movement.

Today’s super salad is very simple and loaded with nutrients to get you charged. The key is the dressing which is natural, home made and can be stored in the fridge for another helping unless you are like me who likes a salad loaded up. We’re staying with my great friend here in Hawaii who’s got a NutriBullet, the number one Christmas present this year I believe. In any case, it worked a treat to make the dressing and as the NutriBullet has a closed container you can stick the remainder in the fridge for later.

Simple Super Salad (serves 1)

2 carrots, shredded

Handful of clover srouts (or alfalfa)

Handful of spinach

2 tbsp cashew nuts

1 tbsp kimchi

Dressing

1 garlic clove

Juice 1 lemon

2″ piece ginger root

1 tsp tahini

1 tbsp tamari sauce

1 tsp Dijon mustard

15 cashew nuts

2-3 tbsp water

Place all dressing ingredients in blender or NutriBullet and blitz. What you end up with is a white, frothy dressing that tastes divine. Mix with salad ingredients and enjoy!
