Fast Food – Green Swede Style

When you need to recalibrate your body fast, look no further than veggie fast food – also known as ‘clearing the remains of your veg drawer’. Today’s recipe is jam-packed with omega 3 fatty acids, protein and minerals and is quick and easy to prepare. It also has no set parameters as you use what you’ve got at home so the world is your oyster. That’s the really practical aspect of eating mainly vegetables – it all works!

Food prep has to be fast and furious in my house (mainly because I’m ravenous at mealtimes),  so I shred, spiralise and chop in minutes before making a quick dressing to pour over my creation. If you’ve got left over sweet potato, chick peas or lentils lurking in the fridge things go even swifter. The key here is not necessarily to follow my recipe but rather to use what you’ve got and be your own chef! Love fennel? Then use that. Colourful carrots or sweet romano peppers? Then use that instead. That’s how simple this vegetable malarkey really is. The ginger and sesame dressing is a favorite of mine but you can easily just use your own vinaigrette with Dijon mustard. Be creative. Be inventive. Be you.

Fast Food – Green Swede Style

Vegetables

1 sweet potato, cooked and cubed

1 handful spinach, wilted or raw

1 courgette (zucchini) spiralised

Generous pinch of wakame seaweed, soaked in warm water first

1 tbsp sunflower seeds

1 tbsp chia seeds

Dressing

2 tbsp olive oil

1″ ginger, chopped

1 garlic clove

1 tsp miso paste

1 tsp rice vinegar

1 tsp honey/maple syrup

1 tsp toasted sesame oil

1 tsp sesame seeds

1-2 tbsp water

Combine all vegetables, including seaweed and cooled sweet potatoes, in a large bowl. Add dressing ingredients into a bowl and use your stick mixer to blend all into a smooth paste. Adjust until you have desired consistency. Pour over mixed vegetables and sprinkle the seeds on top. Share if you dare – voila!
