Looking for a quick pudding? Here it is. That this mix tastes as good as it does is just a testament to the ability of chocolate to make most things scrumptious. This is a truly HEALTHY pud too as it contains wonderful avocado (omega 3,6 and 9 fatty acids, vitamin B, magnesium and zinc, raw cacao (anti-oxidant superstar), maple syrup (anti-oxidant, zinc) and potassium laden banana. It takes literary minutes to make (including scraping the sides which seems to accumulate some of the mousse) but just a word of caution – a little maple suryp goes a long way, just sayin…
If I’m making this for my children I tend to add some almond milk into the mix to create more of a ‘milk chocolate pudding’ which they love. Go on and have a try!
Vegan Chocolate Avocado Mousse
(serves 2)
1 large avocado, ripe
3-4 tbsp raw cacao powder (depends on your love of rich, dark choc)
1 banana, ripe
1 tbsp raw maple syrup (if you prefer dates as a sweetener then make sure you soak them in warm water first)
Pinch of sea salt
Optional extras: almond butter, medjool dates, ground nuts
How to:
Mix all in high-speed blender or food processor. You will have to scrape mousse from sides a few times until you get a super smooth mousse. Serve with yoghurt, ice cream, berries, desiccated coconut (my favorite) or a sprinkle of nuts. You can really be creative with this. Another use is as soft icing for chocolate cakes or fairy cakes.
