Good morning Honolulu

The last time I was in Honolulu I got introduced to the joys of green cooking and eating by my lovely friend, Kathleen. I remember coming back to London, armed with Kris Carr’s book, Crazy, Sexy Diet and a burning desire to juice. Fast forward two years and I’m back here in Hawaii to get more green inspiration and reconnect with some of my oldest friends. 20140409-102408.jpg

Our generous host and friend has relocated to Waikiki Beach and this morning we were lucky enough to start the day with tea and avocado/tomato crackers on his balcony. It was a gloriously sunny day and the locals were out jogging or going to the gym across the street – fitness is a really big deal with those living on this island and the results are clear to see on the beach. My body pump class last night was filled to the brim with fit islanders enjoying the rigorous workout and from conversations I had on the night this appeared to be an almost daily ritual – not once or twice a week!

Which leads me to the latest cook book that I want to lay my hands on, Vegetable Literacy by Deborah Madison. Somewhat of a legend in the American vegetarian cooking genre, Madison has inspired green cooking for years. Flicking through the pages of all the mouth watering recipes I can clearly see why. I promise to cook something from this wonderful book during my Hawaiian stay and will report back on this blog.
