My yummie dinner tonight was inspired by fab blogger Ella Woodward, (www.deliciouslyella.com).
Left over quinoa,
1/2 avocado, sliced
Handful of chopped cherry tomatoes
2 tbsp chopped sundried tomatoes
2 tbsp applecider vinegar
1/2 lime (the juice of)
2 tbsp olive oil
Green beans
Pinch of pink Himalayan sea salt
1 tbsp maple syrup
Distribute the quinoa, avocados and beans in any artistic way you like – I like it stripey. Mix the cherry tomatoes and sundried tomatoes together in a bowl and add the applecider vinegar, lime, olive oil, maple syrup and sea salt.
